Chipotle Arctic Char, East Coast Lobster and Globe Artichoke Cake with a Spicy Avocado Beurre Blanc Details: Preparation time: 25 Minutes Cooking time: 10 Minutes Ready Time 35 Minutes Ingredients - Chipotle Arctic Char, East Coast Lobster and Globe Artichoke Cake Arctic Char Filet - 6 oz Lobster Claws - 4 ea Globe Artichoke Hearts - 2 ea Chipotle (Canned) - 1 pc Lemon juice - 1 tsp Cilantro - 1 tbl spoon Shallots - 2 tbl spoon Roasted Red Pepper - 1 ea Garlic - 1 tsp Horseradish Mustard - 1 tsp Egg - 4 ea Panko Bread Crumb - 2 cups Greek Seasoning - 1 tbl spoon Flour - 2 cups Season to Taste Ingredients - Spicy Avocado Beurre Blanc Dry White Wine - ¼ cup White Wine Vinegar - ¼ cup Finely Chopped Shallots - 2 tbl spoon Heavy Cream (35%) - 1/3 cup Salt and Pepper to taste Finely chopped Green Chili - 2 ea Unsalted Butter - 1 cup Diced Avocado - 2 tbl spoon Directions: Method for Chipotle Arctic Char, East Coast Lobster and Globe Artichoke Cake : 1. Cut the Arctic Char filet into small dice in a mixing Bowl. 2. Cook the Lobster, save the tail, crack open the claws to extract the meat. Slice the Claw meat. Add it to the Mixing Bowl. 3. Cook the Globe Artichokes and extract the hearts. Small Dice the Hearts. Add it to the Mixing Bowl. 4. Add Chopped Shallots, Roasted Red Pepper, Chipotle, Cilantro, garlic, Horseradish Mustard, Lemon juice, 1 egg and 2 oz of Flour. Season to taste. 5. Form the mixture into cakes (2.5 oz ea). 6. Follow the standard breading procedure to bread the Salmon and Lobster cakes - Flour, Egg wash, Bread crumb (seasoned with Greek Seasoning). 7. Melt butter in a pan, and sear the Salmon and Lobster Cake. Finish in the oven till the internal temperature reaches 145 F Method for Spicy Avocado Beurre Blanc : 1. Boil Wine, Vinegar and shallots in a 3 qt heavy saucepan over moderate heat until liquid is syrupy and reduced to 2 to 3 tablespoon (approx 5 mins). 2. Add Cream and boil for 1 minute. 3. Reduce Heat to moderately low and add a few tablespoons butter, whisking constantly. Add remaining butter a few pieces at a time, whisking constantly. 4. Remove from heat and season to taste. 5. Whisk in the diced avocado and chopped seeded Green Chili. 6. Pour Sauce through a medium-mesh sieve. Serve Immediately…
