PRAWN AND CHORIZO SKEWER Prep Time:  5 Minutes Cook Time:  5 Minutes Ready Time: 10 Minutes Ingredients Chorizo Sliced – 16 slices King Prawns (cooked and peeled) – 16 ea Lemon – 1 ea Parsley, chopped – 1 tsp Cilantro, chopped – 1 tsp Cumin powder – ½ tsp Garlic, crushed – ¼ tsp Olive oil – 1 tsp Directions 1. Pre-Heat oven to 350 F. Skewer the Shrimp and the skewer together and place it on a baking sheet. 2. To make the gremolata, mix together the lemon juice, parsley, cilantro, cumin powder, olive oil and garlic. 3. Pour it over the skewers and roast them for 5 minutes. 4. Serve Hot.

CHAMPAGNITO Prep Time:  15 Minutes Ingredients (Per Serving) 6 Fresh Mint Leaves 1/2 Slice of Lime White Rum – 1 oz Sugar Syrup – 1 tblsp Champagne (Or any other Sparkling Wine) - 125 ml Strawberry – 1 ea Crushed Ice – ¼ cup Directions 1. Put the mint leaves, lemon slices and sugar syrup in a Collins glass and muddle. 2. Add the rum, crushed ice and mix well. 3. Top the glass with the Champagne. 4. Garnish with a Strawberry
