Apple Vichysoise Details: Prep Time : 15 Minutes Cook Time:  20 Minutes Ready Time :  1 Hour SERVINGS: 4 servings Ingredients Butter - 1 tblsp Onions (chopped) - 1/3 cup Ontario Granny Smith Apples (peeled, cored and diced) - 2 cups Pellar Estate Riesling - 1/3 cup Vegetable Stock - 1 ½ cup Apple Juice - ½ cup Heavy Cream - 1 cup Chiffonade of Sage - 1 tblsp Blue Cheese - ¼ cup Salt and Pepper - To taste Finely Diced Ontario Macintosh - 1 cup (for garnish) Butter - 1 tblsp (for garnish) Sugar - 2 tblsp (for garnish) Directions: 1. Sweat the chopped onions in the melted butter over medium heat till the onions are soft. 2. Add the Diced Granny Smith and cook till they are soft. 3. Add the Wine and reduce, till almost all the wine has evaporated. 4. Add the Vegetable Stock, Apple juice and the Heavy Cream, and bring to a simmer. 5. Add the Sage, Blue Cheese, and check for seasoning 6. Puree the soup in a blender and refrigerate. 7. Over medium heat in a saucepan, sauté the diced Macintosh in butter and sugar, till the Apple caramelizes. Serve the Soup Chilled, garnished with caramelized Macintosh Apples.
