Tandoori Style Chicken Wings Details: Preparation time: 15 Minutes Cooking time: 20 minutes Ready Time 35 minutes Ingredients - Serves 4 Chicken Wings - 1kg Yogurt (Plain) - ½ cup Tandoori Spice - ¼ cup Chili Powder - 1 tblsp Cumin powder - 1 tblsp Coriander powder - 1 tblsp Paprika - 1 tblsp Ginger paste - 1tblsp Garlic paste - 2 tblsp Canola Oil - ½ cup Lemon juice - 1 lemon Lemon Wedges and Sliced Red Onions for Garnish Directions: 1. In a mixing bowl, mix together the yogurt, spices, oil, ginger and garlic paste and the lemon juice. 2.  Make shallow diagonal gashes on the chicken wings 3. Marinade the Chicken pieces with the  yogurt, oil and spice mix and keep in refrigeration for atleast 30 mins… the more the merrier… I prefer to do this on Saturday night, so it is ready for me on Sunday.  The longer it marinates, the tender the chicken gets. 4. Either grill the chicken wings or cook them in the oven (at 350F) for 15 - 20 mins or till the internal temperature of the chicken wings reaches 180F. 5. Serve Hot, garnished with lemon wedges and Sliced Red Onions Stuffed Baby Portabella Details: Preparation time: 20 Mminutes Cooking time: 15 minutes Ready Time 35 minutes Ingredients - Serves 4 Baby Portobello Mushrooms (washed and cleaned) - 16 ea Garlic (chopped) - 2 tblsp Balsamic Vinegar - 4 tblsp Cajun seasoning - 2 tblsp Olive oil - 2 tblsp Maple Syrup - 1 tblsp Tomatoes (fine diced) - 2 ea Red Onion (fine diced) - 1 ea Walnuts (chopped and roasted) - ¼ cup Dried Cranberries - ¼ cup Lemon juice - ½ lemon Olive oil - 2 tblsp Cilantro (chopped) - 2 tblsp Mint (chopped) - 1 tblsp Jalapeno (de-seeded & chopped) - 2 ea Garlic (chopped) - 1 tblsp Salt, pepper to taste Boursin Cheese(either "Herb and Garlic" or "Pepper") - 1 wheel Directions: 1. In a mixing bowl, mix together the balsamic vinegar, Cajun seasoning, maple syrup, Olive oil (first)and the garlic (first). 2. Marinate the portabella mushrooms in the marinade and let it sit for atleast 10 mins. 3. In another mixing bowl, mix together the rest of the ingredients, except the boursin cheese. Let it sit overnight. This is also, something that I would do on the Saturday, so the flavours can marry together. 4. If you have a cast iron pan, that would be a great tool to use for this, otherwise, use a frying pan. Heat the pan till the pan is quite hot. Place the mushrooms on the pan to sear the top. 5. Once seared, take it off the heat. Fill with the stuffing mixture. 6. Top the stuffed mushrooms with crumbled Boursin Cheese and put it in the oven for 10 minutes at 350F, till the stuffing gets warm, and the boursin melts. 7. Serve it right out of the oven.
